Veg masala bhat or aloo masala bhat

Aloo bath is a delicious rice recipe. You can any kind of vegetable to it.

Ingredients
Ingredients for prepare masala
  • 1 tsp Oil
  • 1 tsp Coriander seeds
  • 1/2 tsp Cumin (jeera)
  • 1/2 tsp Sesame seeds (thil)
  • 1/2 tsp Poppy seeds (Khasakhas)
  • 1 no Cinnamon (Dalchina)
  • 1 no Star Anise
  • 1 no Black cardamom
  • 4 no Cloves (lavanga)
  • 5 no Black pepper
  • 10 grms Dry coconut
Ingredients for Veg Bath
  • 1 tbsp Ghee
  • 1 tsp Mustard
  • 1 tsp Cumin (Jira)
  • 1 no Bay leaf
  • 1 pinch Hing
  • 1 cup Chopped onions
  • 2 nos Sliced chilies
  • 1 no Finely chopped tomatoes
  • 1 tbsp Ginger garlic paste
  • 15 no Cashew
  • 1 Cup Finely chopped Veg (Carrot, Gobi, peas)
  • 1 no Chopped potato
  • 1/2 tsp Turmeric (Haldi)
  • 1 tsp Red chili powder
  • 1 Cup Rice (preferred Basmathi)
  • 2.5 Cups Water
  • Salt as required
Instructions
Masala Preparation
  1. Heat the oil in a pan. Dry roast all masala ingredients for 2-3min.

  2. Grand them and take it into a bowl.

Aloo bath preparation
  1. Rinse the rice and soak it for 20min.

  2. Heat the ghee in a pan. Then add Mustard, Cumin, bay leaf, and hing saute it.

  3. Then add chopped onions, sliced chilies, and ginger garlic paste. Saut it for some time till they get transparent.

  4. Now add chopped tomatoes, vegetables, aloo, turmeric, red chili powder, and salt. Mix well and Saute it for 5min.

  5. Then drain the rice and add to vegetable. Mix well and saute it.

  6. Add required water and stir well. Cover the pan with lid and cook for 20min or till the rice cooked well.

  7. Once rice cooked add coriander leaves on top of it.
