The best way to make tasty veg fried is by using leftover rice from last night or day. Because the freshly cooked rice contains water in it. So the rice will stick to the pan. Even you use fresh coocked rice but before that, you should spread the rice evenly on a large plate and let it cool down for 20 to 30 min.
You can use your choice of vegetables, but most of them like carrot, beans, capsicum and button mushrooms.
Rinse the rice well in water and drain it. Soak it in water for about 30min.
In a pan boil the 4 to 5 cups of water. Add some salt and 3 drops of oil.
Drain the water from soaked rice and it the rice to the boiled water.
Cook the rice on a medium flame for about 5min without lid.
switch off the stove when the rice just cooked. Then drain the rice.
Cover the rice and keep aside till the rice cools completely. You can also spread the rice evenly on a large plate to cool down.
Preheat the pan and add oil to it. Then add anis (chakri phool) fry for some seconds then add ginger garlic paste. Fry for some time.
Add the chopped spring onions and saute it for 2min.
Add all the chopped veggies, fry them on a medium flame for about 5min.
Do not forget to stir it otherwise the veggies get burnt. Stir continuously to cook the veggies uniformly.
When they almost cooked (Do not overcook, veggies should crunchiness) add salt and pepper. Mix it well.
Add rice to it and mix well till the rice coated with sauce. Cook it for 3min and stir in between.
Serve the rice hot/warm with or without any gravy.
