Spicy tomato rice

As the name shows, this tomato rice is made using only tomatoes and no vegetable is used solely on an onion. However,

  • 2 cups Rice
  • 1 tbsp Ghee
  • 1 tbso Oil
  • 1 tsp Cumin-jeera
  • 2 small Bay leaf
  • 2 small Dalchini
  • 3 nos Cloves
  • 2 nos Green cardamoms / elaichi
  • 2 tbsp Ginger garlic paste
  • 2 nos Creen chili
  • 1 cup Chopped Tomatoes
  • Salt to taste
  • 2 pinch Turmeric / Haldi
  • 1 tsp Red chili powder
  • 1/2 tsp Garam masala
  • 2 pinch pepper crushed Optional
  • Water as needed
  • 1 nos Lemon
  • Coriander leave as required
  • 1 cup Chopped onions if you wish
  1. Wash the rice and drain it. Keep it aside.

  2. Heat the oil and ghee in a pressure cooker (you can use the pan as you wish).

  3. Add bay leaf, cloves, cumin and cinnamon and fry for 1min in low flame.

  4. Add the chopped onions and fry them until golden brown.

  5. Add Ginger garlic paste and fry for some time. Then add chopped tomatoes, salt, and turmeric and fry them for 2 to 3 min in medium flame.

  6. Cover the pan with the lid until they cook soft.

  7. Then add red chili powder and garam masala.

  8. Mix it well and cook until the mixture turns completely soft.

  9. Then add water according to the rice. Stir and check the taste. if required add salt and chili powder.

  10. Once the water boils well, add the drained rice.

  11. Stir once again and cover it with cooker lid. Cook on a medium flame till you ger first whistle.

  12. Switch off the stove. Wait till pressure goes down from the pressure cooker. Then open the lid, add chopped coriander leaves and some lemon juice.

  13. South Indian tomato rice is ready to serve.

you can use any veggies, such as peas, potatoes, etc. And even soy shapes or boiled egg go well.
