Mexican Rice

Method of Preparation:

  • In a pan take 2sp of oil and heat it, add finely chopped onion (1cup), ginger garlic paste, 1cup of chopped capsicum (red yellow and green), fry it for 5min.
  • Add red chilly powder (2sp).
  • Now add equal quantities of  boiled vegetables (beans, potato, cauliflower, sweet corn, carrot).
  • Now add cooked rice (2cups) mix it well. Add salt and garam masala.
  • Garnish with coriander leaves.
