Heat 2 tsp oil in a pan; add chopped onion saute for 3-4 min, to this add ginger garlic paste, green chilli paste, coriander powder, garam masala, salt, cumin powder cook for 2-3 min.
Sprinkle coriander leaves inthe potato mixture. Take required portion of it, press and place boiled egg and close the edges make as ball.
Now beat 2 eggs in a bowl, dip the stuffed eggs and roll in bread crumbs and place in a plate.
Now heat 250 ml of oil in a pan; place the coated eggs slowly into the oil and deep fry on medium flame for about 5 min.
Cut the fried egg cutlet in to equal half and serve hot with sweet chutney.
