Bhendi masala or Bhendi fry or Masal bhendi

It is very easy to make bhendi masala dry or semi-dry curry. I will give you step by step instruction to make a delicious bhendi fry or masala at home. You can have this with pulka, roati, naan or side dish for rice.

  • 250 grms Bhendi (okra or ladyfingers)
  • 1 cup chopped onions
  • 1 tbsp Ginger garlic paste
  • 1 tbsp Red chili powder
  • 1/4 tsp Turmeric powder (haldi)
  • 1/2 tsp Garam masala
  • 1 tsp Coriander powder (Dhania powder)
  • 4 tbsp Oil
  • 3 nos green chilies slit
  • 1/2 tsp Cumin seeds
  • 1 tsp Amchur (Dried mango powder)
  • 1 tsp Kasuri methi
  • salt as required
  1. Wash the bhendi with water, dry them with a soft towel.

  2. Remove both ends of the bhendi and cut them into 2 or 3 pieces based on size.

  3. Heat 2tbsp oil in a pan. Add Bhendi and fry them till they cooked soft. You have to stir in between many times.

  4. Keep the fried bhendi a side 

  5. Heat 2tbsp oil in the same pan. Add cumin seeds and chopped onions. Fry them till it till they get golden brown in color.

  6. Add the green chilies, ginger garlic paste, turmeric powder and saute for 3 min in low flame.

  7. Then add fried bhendi, chili powder, salt and cook for some time. Don't forget to stir in between. No need to cover the pan with lid.

  8. Add the garam masala and dhania powder one by one. And fry them for 5min.

  9. Finally, add kasuri methi and mix well. Cook for 4-5 min stir in between. Then switch off the stove.
